The Chef's cuisine, classic and inventive
The Chef has preserved his passion for duck foie gras, which he serves with brioche bread and candied figs.
While living in Provence, he adopted the sun-drenched recipes of the region from the traditional Gardianne beef stew from Camargue to Mediterranean fish while being sure to use the area's unforgettable olive oil... not to mention the calisson pastries from Aix which he turns into a succulent glazed parfait dessert.
The cuisine of the Chef is a lovely gastronomic crossroads where lands and flavours mix, building into the richness of classic grand cuisine.
Places and atmospheres
While the two main dining areas may have their own unique charm, they share the same feeling of natural refinement. The dining room is enveloped in a bright atmosphere with lovely, white arches, large bay windows that open onto the terrace and the vegetable garden, thick ivory curtains and Ceruse-finished wood chairs... an ensemble enhanced by dark-coloured napkins - black and brown - and Sheesham wood furniture with warm tones, all of it resulting in a contemporary composition in which the guest can feel relaxed.
The terrace which adjoins the dining room shows off its charm through old stones intimately mixed with the abundant surrounding greenery. There in the shaded fresh air, the evenings pass softly and dinners become gourmet moments that stretch out to the time when the flowers exhale their fragrances and a light breeze rustles the leaves.

The Chef loves using the quality products from our different regions in France that change as the seasons turn. He knows them, respects them and highlights them on his menu, which he designs after returning from the market! Origin-certified Loué poultry, Parmesan and Mozzarella cheese, lamb from Alpilles, summer truffles, Pertuis asparagus, beef from Camargue, fish from Mediterranean, seasonal fruit and vegetables… A festival of colours and flavours making for honest, expressive cuisine fresh from the market.

Aperitif: a relaxing rendez vous
The start of the evening is ideal for relaxation at Les Terrasses de Guilles. As the the heat of the day gives way to pleasant cool air, the sky softens and the colours become more delicate. It's time to have an aperitif in the cosy atmosphere of the Bar at Le Mas de Guilles, in a corner of the dining room or outside on the shaded terrace. Either convivial or intimate in spirit, it's truly a soothing, satisfying moment.
To go along with a fresh glass of Côtes de Provence, a home-made cocktail or any other alcoholic or virgin drink, the chef prepares succulent small dishes: tapenade, a traditional "pompe à huile" savoury pastry , a "pissaladière"onion tart or a cheese "gougères" pastry. Everything is home-made to fit the aperitif you're looking for!
